Fermentation |
The harvested grapes are destemmed and subsequently softly pressed. Follows a fementation in steel vats with controlled temperature and selected yeast. subsequently refinement on the fine lees for about 4 months carrying out repeated batonage. Clarified and filtered the wine is bottled in the spring following the harvest. |
